Brioche buns are the undisputed king of burger buns, and will help elevate what would otherwise be a good burger into an immense one! Whilst a little time consuming this recipe is pretty easy to pull together and doesn’t require fresh yeast like many other recipes you will come across. Making a banging bun as a vessel for your burger is satisfying and definitely worth the effort so and go get your bake on!


  • 600g strong white bread flour, plus extra for kneading
  • 2 tsp fast-action dried yeast
  • 2 tbsp caster sugar
  • 100g unsalted butter, softened
  • 2 medium eggs, beaten
  • 50ml warm milk
  • 250 ml warm water
  • 1½ tsp salt


1Combine the flour, salt, yeast and sugar in a large bowl. Rub in the softened butter until the mixture looks like fine breadcrumbs.


2Make a well in the centre and add the eggs and milk. Start to mix together to make a dough, gradually adding the warm water as you go, until you have a soft dough. Tip the dough out onto a lightly floured surface and knead and stretch it for 8-10 minutes until it feels smooth, bouncy and stretchy.


3Return the dough to the bowl, cover with oiled clingfilm and leave to rise for 2-3 hours until doubled in size.


4Once risen, knock the dough back, knead again for a minute or two, then divide into 12 evenly sized pieces. Shape into round domed rolls and put them onto 2 lined baking trays. Cover with oiled clingfilm and leave to rise for around 1 hour or until roughly doubled in size again. For perfectly round buns be sure to leave enough room for them to expand further without touching whilst they cook, I would recommend a couple of cm’s for this.

5Preheat the oven to 200°C, fan 180°C, gas 6, with a baking tin on the oven floor.


6For the glaze, beat the egg with a pinch of salt and 1 teaspoon water. Brush the glaze onto the buns and scatter with sesame and black onion seeds. Pour some boiling water into the hot baking tin in the oven to create steam, and this will give your burger buns a soft crust. Bake the buns for 20-25 minutes, until the buns are golden brown and the undersides sound hollow when tapped. Swap the trays over halfway through cooking.

7Cool the buns on wire racks. Lightly toast them on the barbecue before loading up with your burger and trimmings.
