Pakoras are a super tasty bundle of deep fried deliciousness! Originally a staple street food of India, these tasty morsels make a great starter, or to serve up with a few cold beers as a snack. You can use pretty much any crunchy vegetables that you have to hand in this dish, so once you have the gram flour and spices in your arsenal, you can knock them out any time you fancy. Give them a go, they’re bangin’.


  • 1/2 of a cauliflower
  • 10-15 okra
  • 1 large onion
  • 1-2 red chillies
  • Small bunch of coriander
  • Juice of a lemon
  • 100g gram flour
  • 1 tsp Black Onion Seeds
  • 1 tsp yellow mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • Good pinch of salt
  • 50g soya yoghurt
  • 250ml lager beer
  • Vegetable oil for frying


1Take all the dry ingredients and mix together in a large bowl. Add the yogurt and mix into a paste, before adding the beer bit by bit until you have a batter the consistency of a McDonald’s milkshake.

2Roughly chop the cauliflower into small florets, slice the okra side on so that they shred into fine strips and chop onion into fine strips and finely chop the chilli and coriander (stalk and all) and add all of the ingredients to the bowl of batter mix with a squeeze of lemon.

3Mix everything together so that the batter coats the veggies completely. Then gently spoon a tablespoon of the mixture at a time into hot oil, and deep fry until golden brown.

4Serve immediately with a little more yogurt, fresh coriander and lemon juice.
